Ingredients For frijoles negros cuban black beans

  • 1 lb
    dried black beans
  • 4 c
    water
  • 6 clove
    garlic minced
  • 1 lg
    onion diced
  • 1/4 lb
    salt pork diced
  • 1 lb
    smoked ham hock
  • 2 tsp
    paprika
  • 3 tsp
    ground cumin
  • 4 c
    chicken stock
  • 1/4 c
    sugar
  • 2 Tbsp
    white vinegar
  • salt and pepper to taste

How To Make frijoles negros cuban black beans

  • 1
    Place beans and water in large stock pot. Cover and bring to a boil and boil 2 minutes. Take off heat and let sit 1 hour.

    Add all ingredients except vinegar and salt and pepper. Bring to a boil and reduce to a simmer and simmer 2 1/2 to 3 hours until beans are tender. Adding more water if needed

    Remove ham hock and remove the bones and chop meat and add back to pot. Add vinegar , salt and pepper and cook until vinegar is warmed through
