My mom always made this at Thanksgiving and Christmas so it brings back memories for me. My family loves it. I don't know where Mom got the recipe.

Ingredients For broccoli & rice casserole

  • 1 c
    celery, diced
  • 1 c
    onion, diced
  • 1 stick
    butter or margarine
  • 1 can
    cream of mushroom soup
  • 1 can
    evaporated milk
  • 3/4 can
    water (use soup can to measure)
  • 10 oz
    broccoli florets
  • 1 c
    minute rice
  • 8 oz
    cheese, shredded

How To Make broccoli & rice casserole

    Saute onions and celery in the butter.

    Mix the soup, milk, and water in a bowl.
  • 3
    Add the onions, celery, broccoli and rice to the soup mixture. Put in a casserole pan. Be sure and spray your baking dish.

    Bake 45 minutes at 350. Top with cheese and return to oven approximately 15 minutes, or until cheese melts.
