I've been enjoying this rice dish for years, after tweaking a recipe of my moms, as it needed a little kick. I think my additions made a great dish even better. This is one of my very favorite rice dishes, it's a meal in itself. It will have your house smelling terrific! :) Enjoy!

Ingredients For ~ my favorite sausage & rice dish ~

  • 1 Tbsp
    olive oil
  • 3
    links of italian sausage or hot italian sausage - casings removed about 8 ounces
  • 1/2
    each - red and green bell pepper - chopped
  • 1 lg
    sweet onion, chopped
  • 1 c
    uncooked, white rice or aborio rice
  • 1/3 c
    white wine
  • 4 1/2 c
    chicken broth, divided
  • 1 tsp
    garlic paste
  • 1 tsp
    dry italian seasoning
  • 1 c
    pasta sauce - i always use delgrosso pepperoni flavor
  • 1 tsp
    red pepper flakes
  • 1/4 tsp
    fresh cracked black pepper
  • 1/2 c
    shredded parmesan cheese

How To Make ~ my favorite sausage & rice dish ~

    In a dutch oven, over medium heat, brown sausage in olive oil, breaking meat apart as it cooks. When halfway cooked add the peppers and onion and continue cooking until tender crisp. If much grease accumulates, drain and add the garlic, cook another minute.

    Heat chicken broth. Add the rice to the sausage mixture and cook for a couple minutes, stirring often.

    Now, add the wine, Italian seasoning and 1 cup of chicken broth and stir until liquid is absorbed, add another cup of broth and repeat until absorbed, stirring often. Add one more cup of broth and stir until absorbed. ( 3 cups in all.)

    To the remaining broth stir in the pasta sauce and continue adding a cup at a time. By now rice should be tender and creamy. To this, stir in Parmesan cheese, pepper and red pepper flakes, stir and serve immediately.

    I serve with a side salad and some good crusty bread. The rice is so tasty good!
