Ingredients For benihana japanese fried rice

  • 1 1/4 c
    uncooked short-grain japanese white rice
  • soybean oil
  • 2
    eggs beaten
  • 1/2 c
    finely diced green onions (scallions)
  • 1/2 c
    frozen peas, thawed
  • 1
    medium carrot, finely grated
  • 4 tsp
    soy sauce
  • salt and pepper to taste

How To Make benihana japanese fried rice

    Cook the rice according to the package directions. Once done, empty into a medium mixing bowl. In large skillet, heat 2 tsps. oil. Scramble the eggs into small pieces until cooked. Empty scrambled eggs into the bowl with the rice and stir together. Using the same pan, add additional oil, diced green onions, peas, and carrot. Let simmer on low heat for 5 minutes. Add several scoops of cooled rice and egg mixture to the skillet. Keep gradually adding scoop ata a time to the pan and stir continuously. While mixing, slowly add the soy sauce a teaspoon at a time until fried rice is a golden brown color. Add salt and pepper to taste.
