A good way to use up that leftover rice that's sitting in the fridge. To first soften it up, try microwaving it while covered with waxed paper. This dish lends itself to the addition of all sorts of other ingredients, or it can be eaten as is, as a side dish, or for lunch.

Ingredients For basic fried rice

  • cooked rice: plain or flavored (one to two cups)
  • One or two lg
    eggs, slightly beaten
  • One lg
    yellow onion, sliced lenghtwise
  • 1/4 to 1/2 stick
    butter
  • salt & pepper to taste

How To Make basic fried rice

    Melt butter in frying pan, add sliced onion and saute until onion is limp. Add rice, mix into onion. Mix in beaten eggs and seasoning. Keep tossing mixture in pan until egg is properly cooked.

    That's the basis of it. If you feel like throwing in different spices, cut-up leftover meat, boiled shrimp, frozen mixed vegetables - the list is only defined by your imagination - feel free.
