To speed up this delicious potato dish. I microwave my potatoes. This is one delicious dish. You could add other favorites to it with no problem. This recipe could easily be halved also. It makes a deep dish full. Enjoy!

Ingredients For twice baked cheesy potato casserole

  • 12
    unpeeled potatoes, baked ( medium )
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 2 lb
    bacon, cooked and crumbled
  • 3 c
    mozzarella cheese, shredded
  • 3 c
    cheddar cheese, shredded
  • 4 c
    sour cream
  • diced green onions, optional

How To Make twice baked cheesy potato casserole

    Preheat oven to 350 degrees F.; grease the bottom and sides of a deep 9 x 13 baking dish.

    Cut baked potatoes into 1 inch cubes. Spread half of the cubed potatoes in the bottom of the prepared baking dish.

    Sprinkle the potatoes with half of the salt, pepper, onions if using and bacon.

    Add half of the sour cream on top and carefully spread out evenly. Sprinkle half of the cheeses over the sour cream.

    Repeat all of the layers. As you notice, this is a very full casserole. Make sure you use a deep casserole dish.

    Place in the preheated oven and bake, uncovered, for 30 to 45 minutes or until the cheese is melted and nicely browned.
