I got this recipe from my Aunt Sybil in Kentucky, she has passed now, but she was a wonderful cook. I made this several years ago for my in-laws Thanksgiving Dinner, now it is a staple every year. My mother in law use to make sweet potatoes in the skillet but they now all love this much better. It is almost a dessert.

Ingredients For sweet potato casserole

4 cmashed sweet potatoes

1 tspvanilla
-
1 ccoconut
-
2eggs
-
1 cgranulated sugar

1 stickbutter or margarine
How To Make sweet potato casserole

1Mix all ingredients well in a large bowl. You can use 2-40oz. cans of sweet potatoes, mashed. Grease large 9 x 13" baking dish and place mixture in pan.

2Topping: 1 cup brown sugar 1/2 cup butter or margarine 1/2 cup pecans, chopped

3Mix the topping and sprinkle on top. Bake 350 degrees or until brown - about 20-25 min.
