This is a favorite of ours at Christmas. It makes a huge bowl and everyone seems to enjoy it!

Ingredients For our holiday potato salad

  • 10 lb
    potatoes
  • 1 jar
    mayonnaise
  • 1
    chopped onion
  • 12
    eggs, hard boiled
  • 1 jar
    pickle relish, sweet
  • 1/4 c
    mustard
  • pinch
    salt and pepper to taste
  • dash
    paprika

How To Make our holiday potato salad

    Boil your potatoes with the skin on, approx. 30-40 min. test them with a fork to see if they are tender. Pour hot water off when well done and cover them with cold water. This will make the peeling peel off easily. Chop them into small pieces and then salt and pepper them.

    Boil your eggs until done. (I usually do them about 5 min or so and let them remain in pan for about 20 min. then take out and put in cold water to peel) Mix your sauce together, mayo, chopped onion.. you may want to use less onion or more according to your taste. And your pickle relish and mustard. And lastly put in your eggs.

    I have a huge bowl that I use, not sure the measurement of it.. I put the chopped potatoes in the bowl and then mix the sauce in. Sprinkle all over with paprika. It is very versatile.. adjust according to your taste the salt, pepper etc. It's better to let it refrigerate overnight. Enjoy!!
