This is just a made-up quick twist to my regular potatoes and onions that I fry in vegetable oil. My husband is my best critic and he is actually a great cook too!

Janice's potatoes and onions is the perfect example of a quick and easy recipe being the best kind. The onions caramelize a little bit. Seasoned perfectly, the potatoes are tender with a slight crust from frying in olive oil. A quick side dish that cooks in no time. This could be served at dinner or even breakfast alongside eggs.

  • 3-4 md
    Russet potatoes
  • 1/2
    onion
  • 1 dash
    salt
  • 1 dash
    pepper
  • 1 dash
    garlic powder
  • 1 dash
    paprika
  • 1 1/2-2 Tbsp
    olive oil

How To Make olive oil stir fry potatoes and onions

  • Potatoes cut into thin slices.

    Peel, wash, and cut potatoes in thin slices.
  • Onions cut into thin slices.

    Peel onion and cut an onion into thin slices.
  • Frying potatoes and onions in olive oil.

    Heat olive oil and add potatoes and onions. Sautee until potatoes and onions are nearly done. Sprinkle seasonings and continue to cook. Press spatula and see if potatoes are soft. When soft take up and serve. This goes great with grilled meat and baked meat.
