There are many variations to this great tasting recipe, this is one of many versions listed in my cookbook. It is by my Sister N Law Marge. You will probably never have any left when you serve it. It is always a great hit at parties & potlucks. This is a regular family size version, I also have a CROWD SIZE RECIPE VERSION IN MY COOKBOOK. One that I have used for years at our Family Reunions & other gatherings. You can add garlic powder, onion powder to add a little more flavor if you like. I also like to add the addition of red and or green bell pepper for color & flavor, but that's optional

Ingredients For margie's party potatoes

  • 2 lb
    frozen hash brown potatoes, thawed
  • 2 c
    sour cream (16 oz)
  • 1 can
    cream of chicken soup
  • 8 or more oz
    shredded cheddar cheese( use sharp for more flavor)
  • 1/2 c
    chopped onions, (use green for color)
  • salt & pepper to taste
  • 1 1/2 tsp
    granulated onion & garlic powder (optional)
  • 2 c
    crushed corn flakes, mixed with 1 stick butter or margarine, melted
  • 2 tsp
    dried or fresh parsley flakes (optional) added to corn flakes for color

How To Make margie's party potatoes

    PREHEAT OVEN TO 350 DEGREES F. Grease or lightly spray a 9 X 13 X @ inch baking dish with butter or cooking spray. Set aside till needed. Combine all ingredients together EXCEPT FOR CORN FLAKE TOPPING, into a large bowl and stir to mix well till combined.

    Pour potato mixture into the prepared casserole dish. Bake in Preheated 350 degree F. oven for 45 minutes. Then spread corn flake mixture on top and bake an additional 20 minutes, or until topping is golden brown and potatoes are bubbly along sides of dish.

    NOTE:It is important to thaw potatoes first, or it will take longer for your dish to cook, and it is a good possibility that they will be watery, and not as creamy. I LEARNED THE HARD WAY YEARS AGO.
