I needed a quick dish to go with oven fried chicken - so it had to be potato salad! I had some cheese already grated, and some bacon already made into bits, so adding a little sour cream and onion gave me a very nice side dish.

Ingredients For susan's loaded baked potato salad

  • 3 lg
    potatoes, peeled and diced
  • 1/2 c
    olive oil mayonnaise (reduced fat)
  • 1/3 c
    low fat sour cream
  • 1 Tbsp
    sugar
  • salt and pepper to taste
  • 1/4 c
    finely chopped red onion
  • 3 Tbsp
    bacon bits
  • 1/4 c
    shredded cheddar cheese

How To Make susan's loaded baked potato salad

    Cook potatoes in boiling salted water about 20 minutes. Drain and rinse with cool water; chill.

    When chilled, combine mayonnaise, sour cream, sugar, salt, pepper, and onion in a bowl. Stir in potatoes. Gently fold in bacon bits and cheese. Chill until serving time.
