  • 11/2 c
    fat free milk
  • 1 1/2 c
    shredded extra-sharp cheddar cheese,divided
  • 1 c
    shredded monterey jack cheese,divided
  • 1 c
    cubed processed american cheese
  • 1/2 c
    chunky blue cheese dressing
  • 2 Tbsp
    honey mustard
  • 1/4 tsp
    black pepper
  • 2 1/2 lb
    peeled baking potatoes,cut into 1/4-inch-thick slices
  • 1 c
    diced carrots
  • 2 Tbsp
    chopped fresh parsely

How To Make cheesy scalloped potatoes

    Preheat oven to 350 degrees.

    In a medium mixing bowl,combine milk,3/4 cheddar,1/2 cup monterey jack,1/2 cup american cheese,blue cheese dressing,honey mustard and pepper;mix well,set aside.

    Arrange half of potatoes and half of carrots in the bottom of a 13 x 9-inch baking dish coated with cooking spray.Top with half of milk mixture.Repeat layers;top with 3/4 cup cheddar,1/2 cup monterey jack,1/2 cup american cheese and parsely.

    Cover and bake at 350 degrees for 1 hour and 15 minutes.Uncover;bake an additional 20 minutes or until potatoes are tender and cheese is browned.
