Ingredients For aunt elizabeth's sweet potato casserole

  • CASSEROLE
  • 1 29oz can
    sweet potatoes (drained)
  • 3/4 stick
    butter
  • 1 lg can
    evaporated milk
  • 1 1/4 c
    sugar
  • 1/4 c
    plain flour
  • 2 eggs lg
    (slightly beaten)
  • TOPPING
  • 1/2 c
    light brown sugar
  • 1/2 c
    coconut
  • 1/2 c
    pecans (chopped)
  • 1 c
    corn flake crumbs
  • 3/4 stick
    butter

How To Make aunt elizabeth's sweet potato casserole

  • 1
    Mix all 'casserole' ingredients together with mixer. Pour into 13"x9" dish, bake at 350 degrees for 15 minutes.

    Mix all 'topping' ingredients together and top potatoes. Top with large marshmallows if desired. Bake 15 minutes more.

    If desired, prepare potatoes, cook and refrigerate the day before serving. Also, mix topping and put in a covered jar or bowl in refrigerator. Baking will take about 5 minutes longer because the dish is cold.
