I love fish & potatoes I wanted to try a new recipe. I found this recipe by doing a Yahoo search for a tilapia recipe. Just type tilapia recipes in Yahoo search bar & click on RecipesForYou.net/FreeRecipes then download the TotalRecipeSearch toolbar. Once downloaded, you can search for tilapia recipes & this recipe will appear. Then searched for mashed potatoes recipe & the recipe will appear. My husband loved both recipes & said both are definetely top recipes I've made. If you don't like tilapia or almonds you can use any fish & nuts you like.

Ingredients For almond crusted tilapia & say cheese mashed taters

  • 4-6
    tilapia fillets(6 oz each)
  • 1/2 c
    almonds, chopped finely
  • 1/4 c
    unbleached wheat flour
  • 1 tsp
    salt, divided ( i used kosher but you can use whatever you like)
  • 1/4 c
    olive oil, extra virgin(divided)
  • 1/4 c
    butter, divided
  • 6 lg
    baking potatoes(i used russets but you can use whatever you like)
  • 6
    scallions, chopped
  • 1 stick
    butter, room temperature
  • 1/8 tsp
    white pepper
  • 1/8 tsp
    salt(i used iodized but you can use whatever you like)
  • 1/8 tsp
    garlic powder
  • 1 c
    milk, 2%
  • 2 c
    cheddar cheese, shredded

How To Make almond crusted tilapia & say cheese mashed taters

    Boil water for potatoes. Peel & chop potatoes into medium chunks. Place in water & cook until tender, about 10 minutes. Chop white part of scallions & saute in 1 Tbsp. butter until soft, about 5 minutes. Drain potatoes & add the remaining stick of butter, white part of scallions, salt,white pepper, garlic powder, & milk. Mash potato mix with beater & then add cheddar cheese & stir until well blended. Chop up green parts of scallions & place on top of potatoes.

    Place almonds in a food processer & chop finely. In a shallow bowl, combine 1/4 wheat flour & almonds. Season each tilapia filet with 1/8 tsp. salt & dredge in flour & almond mix. Heat 2 Tbsp butter & olive oil in large nonstick skillet. Place 3 tilapia filets in skillet & cook for four minutes on each side. Place on plate & wrap with foil. Repeat for a 2nd batch.

    Serve tilapia & mashed potatoes with biscuits & a salad.
