My son is a vegetarian and I am always trying to find new recipes for to fix for him. Our whole family loves Pesto and Pasta so I thought I would share this recipe for our vegetarians out there. You can add diced chicken for those of you that like meat in your pasta.

Ingredients For pesto pasta

  • 3 c
    pkg. penne rigate pasta
  • 1/2 c
    pesto (i buy the jar of pesto at grocery store)
  • 1/2 c
    cup shredded sharpe cheese or any cheese you desire. some people use feta.
  • 1/2 c
    roasted red peppers in a jar

How To Make pesto pasta

  • 1
    Make It COOK pasta as directed on package, omitting salt. Drain; return to pan. STIR in cheese. (I use shredded cheddar). ADD pesto and peppers; cook and stir on low heat 3 to 5 min. or until heated through.

    Special Extra Add 2 cups grilled chicken strips or chopped rotisserie chicken with the pesto and peppers. (I only add chicken when I am not making this for my son). Take Along This pasta dish, which also tastes great cold, makes a great salad to serve as part of your brown-bag lunch.
