This is my grandmother's version of spaetzle. I would imagine she got the recipe from her mother, who left Germany when she was a teenager. It is different from those noodley little things you get in a restaurant. These are more like little dumplings.

Ingredients For spaetzle

2eggs

1/2 cwater

1 1/2 cflour

1/2 tspsalt

1/4 tspbaking powder
How To Make spaetzle

1Lightly beat eggs. Add water. Mix dry ingredients together and combine with eggs and water.

2Drop small bits of dough from the end of a teaspoon into boiling salted water. Do not crowd. You may have to do a couple of batches. Once they rise to the surface (almost immediately), cook for an additional 1-2 minutes. Drain.

3This next step is optional. I melt butter in a skillet and pan fry until lightly browned on each side. If you prefer, you can serve them straight from the boiling water.
