Having a Cajun mother and grandparents was a wonderful thing growing up.I learned alot from all of them from sewing to cooking.Mom grew up very poor and they had to make the best of what they had.She also worked in the fields picking cotton while grandma sewed dresses and sold them for 2.00 a piece.When we would go visit them in Louisiana the first thing walking in the door was the wonderful smell of gumbo and greens.Although my husband doesn't care for greens my sons and I love them.

Ingredients For southern style collard greens

  • 2 pkg
    2 pkgs fresh cut and washed collards( i wash them again myself)
  • 4
    slices of thick cut smoked bacon cut in pieces
  • 4 can
    chicken stock
  • 1 md
    onion
  • pinch
    cajun seasoning(to taste)
  • pinch
    black pepper

How To Make southern style collard greens

  • 1
    Use a large pot and saute the bacon pieces untill almost crisp.Do not drain grease.Add onion and fry in bacon drippings.

    Add washed and dried greens to pot and stir untill all the greens start to wither and fit in the pot while stiring.Medium high heat.

    Once all the greens are in the pot ,add seasonings and butter,mix well.

    Add chicken stock.It should cover the top of the greens once withered.Taste to check if seasoned enough.Cover and simmer.Check occasionally for liquid level.Add another can of stock if needed.You can really let these cook for hours without worry.
