garrison's bacon and onion relish (for burgers)

Recipe by

I have always loved caramelized onions. I never thought about the bacon thing until recently, when I had the best burger ever on Coronado Island near San Diego. It was a premium cheese burger on a ciabatta bun, served simply with what they called bacon candy. My recipe is an attempt to duplicate my experience. I think my recipe is fairly straightforward and simple, but it does take some time. Make ahead, before you strike up the barbie, and you'll be glad you did.
