I serve this with my Salmon Loaf. It is also wonderful with asparagus or simply buttered toast.

Ingredients For chopped egg sauce

  • 3 Tbsp
    butter
  • 2 Tbsp
    flour
  • 2 c
    whole milk
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 4
    hard boiled eggs, chopped

How To Make chopped egg sauce

  • 1
    Melt butter in a heavy saucepan over low heat
  • 2
    Stir in flour increasing heat until mixture bubbles gently
  • 3
    Cook 2 minutes
  • 4
    Remove pan from heat, add milk and stir, return to heat stirring constantly
  • 5
    Stir until mixture comes to a boil
  • 6
    Reduce heat to medium, stirring constantly adding more milk if mixture becomes too thick
  • 7
    Season with salt and pepper, add eggs and mix.
