Often called the pate of the South, pimento cheese has as many variations as there are home cooks. Many recipes are specific when it comes to ingredients: one may require Hellmanns Real Mayonnaise, another may only use oven-roasted red bell peppers. One of my favorite recipes calls for a touch of Tennessee Whiskey. Tupelo Honey Cafe's is different because they serve it warm with their homemade chips. Source: Tupelo Honey Café Cookbook
