My daughter Noel made up this recipe when she was 15 or 16 years old... she has been cooking with me since she was 2 years old and she started making up recipes of her own when she was 5 years old. Noel is a beautiful, talented, creative, hard working mother of 4 little children. And she has the most wonderful sense of humor! Noel likes to make foods and do wonderful presentations... she gets a lot of OOOOHHHS and AAAAAHHHS...

Ingredients For noel's fresh salsa

  • 12 - 16
    roma tomatoes (diced)
  • 1 lg
    white or yellow onion (diced)
  • 1 can
    (16 oz) black olives (sliced)
  • 1 can
    (7 oz) green chilies
  • 1 bunch
    fresh cilantro (chopped)
  • 1 tsp
    garlic powder
  • 1/2 tsp
    celery salt
  • 1/2 tsp
    ground black pepper
  • 3 Tbsp
    lime juice
  • louisianna hot sauce (to taste)
  • OPTIONAL INGREDIENTS
  • red onion instead of white or yellow
  • 1 can
    (16 oz) whole kernel corn (rinsed and drained)
  • 1 can
    (16 oz) black beans (rinsed and drained)
  • 3 - 4 Tbsp
    extra virgin olive oil

How To Make noel's fresh salsa

  • 1
    Prepare the tomatoes, onion, and cilantro. Add all remaining desired ingredients. Put in a covered dish and refrigerate until ready to use. Remove from refrigerator and give it a couple of stirs. Serve either individually or family style.
