So, we all know how crazy Monday's can be....but when you make a batch of this salsa you'll relax, unwind and forget about the day. Along with fixing yourself a frozen margarita & sitting out on your deck soaking up some sun what more could you want. I just love a fresh made salsa....it really is almost like a meal to me. Grill up some fajitas & top with this salsa & you'll have the best dinner ever! I made up a batch of this salsa to serve with chips over the weekend for my Dad's enchilada dinners we have every 2 weeks. The mango was a new flavor for my family but they really enjoyed it!

Ingredients For manic monday mango salsa

  • 2 md
    mango, fresh
  • 1/2 sm
    pepper, red
  • 1 md
    poblanos
  • 2 sm
    jalapeno peppers
  • 2 clove
    garlic
  • 1/4 md
    onion, white
  • 1 md
    lime, juiced
  • 1
    cilantro, fresh (handful)
  • 1-2 tsp
    tajin seasoning
  • salt and pepper

How To Make manic monday mango salsa

    Gather your fruit & veggies, chop up once or twice and place in Power Chef System or a food processor where you can dice up your ingredients. (If you don't want this spicy be sure to remove seeds from jalapenos). Power Chef has a pull string and it not powered by electric. You just pull the string 5-8 times depending on how fine you want your food chopped. It will puree if you want it to. Greatest idea ever!!! Perfect for camping as well & super quiet when in use.

    Once you've diced it all the fruits & veggies then add in your seasonings, salt & pepper. Serve with chips or over baked fish. Either way is delicious.
