My husband is Italian so he likes different sauce's with his pasta. This is one of his Mother's old recipes.

Ingredients For puttanesca sauce- great for vegetarians

1/4 colive oil

1 cfinely chopped onion
-
6cloves minced garlic
-
228 oz. cans roma plum tomatoes-cut up with juice
-
1 cpitted and halved kalamata olives
-
2 Tbsptomatoe paste
-
2 Tbspdrained capers
-
2 Tbspanchovy paste
-
1/2 tspdried crushed basil
-
1/2 tspcrushed red pepper flakes
-
salt to taste
-
1 lbpenne paste- cooked to al dente
How To Make puttanesca sauce- great for vegetarians

1In a large pot heat the olive oil over medium high heat. Add the onion and saute until soft and lightly caramelized, about 6 minutes. Add garlic and cook an additional 2 minutes. Add the tomatoes and the remaining ingredients and simmer until the sauce is thickened and slightly reduced,about 30-40 minutes. Adjust seasoning to taste,cover and set aside. Add penne paste to the pan and toss for 1 minute. Yield: about 4 cups of sauce.
