I found this in a German organic food magazine. Haven't tried it yet but wanted to keep the recipe. Sounds interesting. Let me know how it turns out if you try!

Ingredients For vegan mayo

1lemon

2 Tbspsmooth white almond butter

1 tspvegetable broth granules

2 tspdijon mustard

1 tspcurcuma/tumeric

1 tspsweet paprika powder

200 mlcanola oil

salt, to taste

pepper, to taste
How To Make vegan mayo

1Juice lemon.

2In a tall mixing bowl / jar combine almond butter with 100ml lukewarm water, broth granules, dijon mustard, tumeric, paprika powder and lemon juice and blend with immersion mixer on high, slowly adding the oil, until a yellow cream is achieved.

3Season with salt and pepper to taste and use in place of regular mayo.
