For those who just do not like anchovies and/or are not comfortable with raw eggs in your dressing, it is now time for you to really appreciate an excellent Caesar Salad. Also, how many times have you wanted a homemade Caesar dressing (the ONLY kind as far as I am concerned) and did not have the first anchovy in your cabinet? This is an easy go-to alternative, and you many find like I have that I can cross those costly anchovies off my grocery list. Don't forget to add crispy Romaine, a good nutty Parmesan, and your favorite grilled shrimp or chicken for a topper!

Ingredients For hidden anchovy caesar salad dressing

  • 1 c
    real mayo
  • 1/2 c
    buttermilk (see buttermilk substitute, below)
  • 1 Tbsp
    lemon juice
  • 1/2 c
    good parmesan cheese, grated
  • 1 1/4 tsp
    crushed garlic (more or less to your taste)
  • 1/8 tsp
    freshly cracked black pepper (more or less to taste)
  • 1 1/2 Tbsp
    worcestershire sauce
  • 2 Tbsp
    light olive oil
  • salt to taste

How To Make hidden anchovy caesar salad dressing

    Combine all ingredients and mix thoroughly in blender or stir very well with a stick blender. The Parmesan will remain slightly grainy, adding an excellent texture. This makes a perfect dip for fresh veggies, Italian chicken wings, or a quick drizzle over Bruschetta.

    If you do not have buttermilk in the fridge, or do not want to buy a larger container for just half a cup you can do a couple of things: increase the recipe!! Give some to friends or family, they will love you for it, or use it all yourself and don't admit it to ANYONE!! :-) Or: Add one tablespoon of vinegar to 1/2 cup WHOLE milk (NOT reduced fat) and let it set for a few minutes. You will see it thicken to buttermilk consistency very quickly. Your recipe will never know the difference!
