grilled vegetable marinade/dressing

I first started using this marinade/dressing on grilled tomatoes, but my favorite thing to use it on is asparagus. I usually dress the vegetables in a casserole dish and put them right back into it when I take them off the grill to save on clean-up. This is great on tomatoes, asparagus, green beans, squash and eggplant.

Ingredients For grilled vegetable marinade/dressing

  • 3 Tbsp
    olive oil
  • 1 1/2 Tbsp
    balsamic vinegar
  • 2 tsp
    honey
  • 1/4 tsp
    dijon mustard
  • 1/2 tsp
    fresh rosemary, removed from stems and chopped
  • 1/2 tsp
    fresh thyme, removed from stems
  • salt and pepper, to taste

How To Make grilled vegetable marinade/dressing

    Wash and prepare vegetable of choice, place in casserole dish.

    Combine the oil, vinegar, honey, dijon, rosemary and thyme in a small bowl and whisk until combined. Pour over vegetables and then add salt and pepper.

    Transfer vegetables to grill and cook over medium heat until tender, usually about ten minutes. Place cooked vegetables back in casserole dish and serve warm.
