creamy caesar dressing

I searched this site for a dressing but could not find something that really stood out. So I found a recipe and tweeked it a bit. It's kind of thick but once you shake it with salad, it works out great. I served this with garlic bread instead of croutons.

Ingredients For creamy caesar dressing

  • 1 clove
    elephant garlic
  • 5
    anchovy filets, stuffed with capers
  • 3/4 c
    mayonnaise, light
  • 3 Tbsp
    parmesan cheese (more if you like)
  • 1 tsp
    worchestershire sauce
  • 1 tsp
    dijon mustard
  • 1/2
    lemon, juiced
  • 3-4 Tbsp
    olive oil, light
  • salt and pepper to taste

How To Make creamy caesar dressing

  • 1
    In a mini processor, chop garlic and anchovies together. Add some of the oil in the anchovy container to the mixture. It'll look a bit pureed.

    In a medium sized bowl, mix the anchovy mixture with the mayonnaise and all of the remaining ingredients.

    Let sit in the refrigerator for an hour or so. The longer it sits, the stronger it gets.
