I found this recipe while we were on our honeymoon in South Texas. Definitely not like Velveeta dip! I like it much better.

Ingredients For mimi's chile con queso

  • 1/2 c
    finely chopped onion
  • 1 tsp
    butter
  • 1-1/3 c
    tomato, chopped and seeded
  • 4 oz
    green chiles, mild (chopped)
  • 1 c
    american cheese, shredded
  • 1 c
    monterey jack cheese, shredded
  • 1 tsp
    cornstarch
  • 1 tsp
    bottled hot pepper sauce, your choice. there are some that are deadly hot out there so be careful!
  • 1 pkg
    tortilla chips

How To Make mimi's chile con queso

    In a saucepan cook onion in butter until tender. Stir in tomatoes and chiles. Simmer uncovered for 10 minutes.

    Put cheese in a large bowl. Sprinkle with corn starch and toss with your fingers to get it covered equally.

    Gradually add cheese mixture to saucepan, stirring until melted. Stir in hot pepper sauce and heat through. Serve with chips. Makes about 1-3/4 cups.
