A few friends and I are tying to cut back on our carb intake, but we all LOVE tuna salad sandwiches. Ages ago at Stumpknocker's in Inverness, FL I remember having a tuna salad dish served on a few leaves of lettuce and a slice of tomato. This is made with that in mind. We loved it!

Ingredients For tuna and tomato salad

  • TUNA
  • 3-4 can
    albacore tuna in water, drained well (reserve liquid)
  • 1
    stalk celery, diced
  • 1/2 md
    onion, diced
  • 5-6 Tbsp
    sweet relish (adjust amount to taste)
  • 1/2 md
    bell pepper, diced
  • 1 Tbsp
    fresh parsley, finely chopped
  • 1 tsp
    dijon mustard (optional)
  • 3-5 Tbsp
    mayonnaise (to your taste)
  • 1 tsp
    lemon juice
  • 1/4 tsp
    celery salt
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    cayenne pepper (optional, to your taste)
  • SALAD INGREDIENTS (OPTIONAL, BE CREATIVE!!)
  • 8
    romaine lettuce leaves
  • or
  • 1 pkg
    baby spinach leaves
  • 3 lg
    tomatoes
  • 3-4
    hard-boiled eggs, peeled and sliced
  • 1 1/2
    bell pepper, seeded and sliced
  • 1
    avocado, sliced
  • 1
    sliced cucumber
  • few oz
    crumbled feta cheese
  • salt and pepper (to taste)
  • drizzle
    balsamic vinegar

How To Make tuna and tomato salad

    In a small bowl, mix mayonnaise, mustard and lemon juice; set aside. Drain water from tuna and reserve. Flake tuna into a medium mixing bowl. Add diced celery, onion, bell pepper, parsley and relish. Stir to mix well. Add mayonnaise mix a little at a time to reach your desired amount of wetness. I only use a little bit of the mix and if it is still not moist enough add a teaspoon or two of the reserved liquid. (My cats wait pretty anxiously at this point to see what they get, lol) Add spices and mix well. Taste for salt and pepper before adding extra.

    On individual serving plates lay out 2 leaves of lettuce (or a handful of spinach) and 3-5 slices of tomato so they tomato make a "dish" in the center, OR cut into wedges and arrange so there is a well in the middle to scoop tuna. Carefully drizzle a small amount of balsamic vinegar over the tomato and lettuce. Scoop tuna to top the tomato. Add sliced bell pepper, cucumber, avocado slices and hard boiled egg to the side. Sprinkle a small amount of feta on the side or over tuna.
