This is a easy chicken pasta salad that keeps in the refrigerator for several days. As it sits it just gets better. The recipe originally came from Mrs. Mickey Leland. I got it from her brother-in-law, whose mother resides at the assisted living community where I do volunteer work.

Ingredients For pineapple chicken pasta salad

  • 2 c
    chicken, cooked, and diced
  • 1 sm
    box pasta shells, cooked and cooled
  • 2 Tbsp
    pineapple, crushed
  • 2 tsp
    soy sauce
  • 1/4 c
    red bell pepper, chopped
  • 1 tsp
    chives, finely chopped
  • mayonnaise, to taste
  • 1 dash
    ginger powder
  • 1/2 dash
    chopped pecans

How To Make pineapple chicken pasta salad

    Combine all the ingredients and chill thoroughly. NOTE: Leftover rotisserie chicken works really well in this dish.
