With pasta added, this gives a nice twist to the typical Greek salad. Be sure to use good-quality feta cheese, as it really makes a difference in flavor and creaminess.

Ingredients For mediterranean summer salad

  • 8 oz
    orzo pasta
  • 2 c
    halved cherry tomatoes
  • 1 c
    fresh basil leaf, chopped
  • 1 tsp
    minced garlic
  • 1/4 c
    toasted pine nuts
  • 1/2 c
    greek olives such as kalamata olive, pitted and halved
  • 4 pkg
    feta cheese, broken into large chunks
  • 2 c
    baby spinach leaves
  • 1 Tbsp
    extra-virgin olive oil
  • 2 Tbsp
    balsamic vinegar
  • salt, to taste
  • fresh ground black pepper. to taste

How To Make mediterranean summer salad

    Cook orzo according to package directions.

    While pasta is cooking:, in a large bowl, combine tomatoes, basil, garlic, pine nuts, olives, feta, and spinach.

    Add cooked, well drained, orzo.

    In a small bowl, whisk together oil, vinegar, and salt and pepper to taste; toss with salad. Serve right away.
