Ingredients For cabbage-carrot slaw w/cranberries, mint & honey

3/4 cdried cranberries

3 Tbspfresh lemon juice
-
1 1/4 tsphoney
-
1/2 tspground cumin (scant)

1/2 tspcayenne pepper
-
fine sea salt
-
1/3 colive oil, extra virgin
-
4 cred cabbage, thinly sliced
-
1large carrot, peeled and julienned
-
1/2 cthinly sliced fresh mint leaves
-
1/4 csliced almonds. lightly toasted
How To Make cabbage-carrot slaw w/cranberries, mint & honey

1Put the cranberries in a small bowl and cover with hot water. Let soak for 10 minutes and then drain and pat dry.

2In a large bowl, whisk the lemon juice, honey, cumin, cayenne, and 3/4 tsp. salt. Whisk in the oil in a slow stream.

3Add the cabbage, carrot, cranberries, mint, and half of the nuts and toss to combine well. Season to taste with salt.

4Serve right away, sprinkled with the remaining nuts OR let sit for up to two hours for a more tender slaw.
