A different twist on Cole Slaw...I love it! Gets better the longer it marinates in the dressing. So, make sure you make it at least 4 hours before serving. ENJOY!

Ingredients For asian inspired slaw

  • 1/2 md
    head, green cabbage or napa - shredded
  • 2
    green onion, thinly sliced
  • 1/2 md
    red pepper, thin sliced or chopped
  • 1 lg
    carrot, thinly julienned
  • 1 sm
    garlic clove, minced
  • 1/2
    inch, ginger root, minced
  • DRESSING
  • 1/8 c
    soy sauce
  • sugar
    to taste, optional - i didn't use any
  • 1/4 c
    + 2 tablespoons, rice wine vinegar
  • black
    pepper to taste
  • 1/2 c
    roasted peanuts

How To Make asian inspired slaw

  • 1
    Mix soy and vinegar together. Set aside.

    In a medium bowl, add all other ingredients ( except nuts ) pepper to taste and toss.

    Pour dressing over vegetables and toss. I place it in a zip lock baggie and every so often toss it in the bag while chilling. Refrigerate for a good 4 hours. Before serving toss with roasted peanuts.
