My oldest sister gave me this recipe, different and tasty!!!!! You can also throw in some white potatoes for the 4th of July!!!!

Ingredients For red and blue potatoe sald

1 3/4 lb. red potatoes

1 3/4 lbs blue potatoes

2/3 cup olive oil
-
1/3 cup + 1 tbls. red wine vinegar

2 tsp.minced fresh thyme or dry

1 tsp.dried oregano
-
8 oz.feta cheese, crumbled

8 largegreen onons, chopped
-
1 largered bell pepper,chopped

kalamata (greek) olives (optional)
How To Make red and blue potatoe sald

1steam potatoes until tender, place in large bowl and cool 15 minutes

2whisk olive oil, thyme, oregano in small bowl. season with salt and pepper i double the dressing recipe

3chop potatoes, pour half the dressing onto potatoes, let stand 1 hour or until dressing is absorbed mix in cheese and remaining ingrediants. salt and pepper to taste. can be made 2 hours ahead, better served at room tempature.
