This is a nice change from traditional potato salad. It is very light and great for summer time picnics.

Ingredients For mediterranean potato salad

  • 2 lb
    red skinned potatoes
  • 1
    green pepper or mult-colored peppers minced
  • 1
    cucumber sliced and quartered
  • 1/2 c
    sliced red onion
  • 8 oz
    feta cheese or gorgonzola
  • 1
    lemon juiced
  • 1/2 c
    italian style salad dressing
  • salt and pepper to taste

How To Make mediterranean potato salad

  • 1
    Bring a large pot of salted water to a boil; add potatoes, cook until tender but still firm, about 15 minutes. Drain, cool and chop

    In a large bowl, combine the potatoes, peppers, cucumber, red onion ad cheese.

    Whisk together lemon juice, salad dressing, salt and pepper; pour over salad and toss.
