This is the hands-down best potato salad out there. Everyone who tries it can't stop eating it. Even my friend who doesn't generally care for potato salad raves about this one! Try it, I dare you to not LOVE it!

An excellent potato salad when you're looking to switch up your go-to recipe. It's creamy with a hint of smokiness. The potato salad has a light onion and mustard flavor with crisp peppered bacon and chopped hard-boiled eggs folded in. You're going to have a hard time not falling in love with this potato salad. It's so good!

Ingredients For ma huck's smoky potato salad

  • 5 lb
    russet potatoes
  • 1 jar
    Best Foods/Hellman's real mayonnaise, 30 oz.
  • 1/3 c
    onion powder
  • salt, to taste
  • 2 Tbsp
    liquid smoke flavoring
  • 2 Tbsp
    yellow mustard
  • 1 pkg
    pepper bacon
  • hard boiled eggs

How To Make ma huck's smoky potato salad

  • Boiling the potatoes.

    Boil potatoes.
  • Eggs in a saucepan.

    In a separate saucepan, also boil one egg per potato until hard-cooked.
  • Frying bacon until crispy.

    While potatoes and eggs are cooking, cook bacon until crispy.
  • Bacon broken into pieces.

    Cool and break bacon into pieces.
  • Potatoes cut into chunks.

    Cool cooked potatoes, then peel. Cut up potatoes into chunks and place in a large bowl.
  • Cooling down the eggs.

    Cool eggs by running cold water over them.
  • Eggs chopped into small pieces.

    When cool enough to handle, peel eggs and use an egg slicer, to cut lengthwise, then turn egg, and cut crosswise to produce small chopped eggs.
  • Potatoes and eggs mixed together.

    Sprinkle potatoes and eggs with salt, and lightly mix. Set aside.
  • Mayonnaise, onion powder, liquid smoke, and yellow mustard in a bowl.

    In a mixing bowl, mix by hand: Mayonnaise (real mayo, NOT reduced fat), onion powder, liquid smoke, and yellow mustard. Set aside.
  • Bacon bits added to the potatoes.

    Mix bacon into potato and egg mixture.
  • Mayonnaise mixture added to the potatoes.

    Pour sauce over all and mix with a wooden spoon. Salt to taste if necessary.
  • Ingredients mixed together.

    Make sure the sauce is good and creamy. If the salad is too dry, add more mayo until creamy.
  • Salad ready to be chilled.
