I seldom enjoy macaroni salad. All those I've eaten are either to sticky or too bland, or both. I think macaroni salad, and potato salad as well, should help moisten your mouth when eating a sandwich, so I like mine "loose". At a church potluck, the minister complimented me, saying this is the only macaroni salad she liked. People who do not like vinegar or moist salads will not like this.

Ingredients For tangy macaroni salad

1 c1 cup of mayo or light mayo, not salad dressing.

2 Tbspvinegar, white vinegar best.

1 Tbspprepared mustard, yellow or brown

1 tspsugar

1 tspsalt
-
1/4 tspblack pepper

1 cfinely chopped green or red bell pepper

1/4 cfinely chopped onion
-
8 ozelbow macaroni (cook and drain it)
How To Make tangy macaroni salad

1Boil a few quarts of water. when boiling, add 8 oz. of elbow macaroni.

2In the meanwhile finely chop the bell peppers and onions. Set aside.

3Combine the first six ingredients to make the dressing.

4Drain the macaroni and toss to rid from water.

5In a large bowl, stir in all ingredients,cover and chill.
