A nice change to traditional macaroni salad. I always have to double the recipe and never have leftovers.

This sweet and macaroni salad reminds us of a deli macaroni salad. Super creamy, there are just the right amount of veggies for a nice crunch. It's a great basic recipe that can be built on by adding ingredients your family enjoys such as cubed ham or hard-boiled eggs. Ideal for a casual game night, potluck, picnic, or summer cookout. This salad is very sweet. If you think it sounds too sweet, we suggest not adding sugar until the dressing is mixed. Then taste, and see if the sugar is needed. Also, initially, there is a lot of dressing. Some will soak into the macaroni, but it will be a little soupy at first.

Ingredients For sweet macaroni salad

  • 16 oz
    elbow macaroni, cooked
  • 1 md
    carrot, shredded
  • 1 lg
    green pepper, chopped
  • 1 md
    red onion, chopped
  • 2 c
    mayonnaise
  • 14 oz
    sweetened condensed milk
  • 1 c
    granulated sugar
  • 1 c
    apple cider vinegar
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How To Make sweet macaroni salad

  • Add cooked macaroni, carrots, green pepper, and onion to a bowl.

    In a large bowl combine macaroni, carrots, green pepper, and onion.
  • Whisk together mayonnaise, sugar, vinegar, salt, and pepper.

    Whisk mayo, milk, sugar, vinegar, salt, and pepper until smooth in a small bowl.
  • Pour dressing over the macaroni mixture.

    Pour over the macaroni mixture. Toss to coat.
  • Cover and chill overnight.
