Great summertime recipe, especially when you can get fresh salmon instead of frozen!

Ingredients For summertime salmon salad

  • 2 lb
    skinned salmon fillets
  • 16 oz
    package frozen english peas, thawed
  • 2 c
    mayonnaise
  • 2 c
    celery, diced
  • 3/4 c
    onion, chopped
  • 1/2 c
    green pepper, diced
  • 1/2 c
    sweet pickle relish
  • 1 1/2 Tbsp
    fresh lemon juice
  • 1/4 tsp
    beau monde seasoning
  • 1/8 tsp
    ground white pepper
  • 4 c
    cooked corkscrew or seashell macaroni

How To Make summertime salmon salad

  • 1
    Arrange salmon fillets on a steaming rack. Place rack over boiling water; cover and steam salmon 10 to 12 minutes or until fish flakes easily when tested with a fork. Remove salmon from steaming rack and let it cool.

    Flake salmon, and place in a large salad bowl. Add peas and the next 8 ingredients; stir well.

    Add macaroni; toss gently to combine. Cover and chill thoroughly.
