We try to eat healthy and it seems easier in the Summer with all the wonderful things available to us. This is one my easy, delicious and healthy 'Go-To's'.Adding Black Beans for protein.

Ingredients For summer salad (all summer long)

1 lime, zested and juiced

1 small orange, zested and juiced

1 bellpepper, diced
-
1 jalapeno, seeded, diced

1 ear fresh corn, cernels cut off cob

2-3 radishes, sliced
-
2 cloves garlic, minced
-
1 baby cucumber, cut lenghtwise, sliced

1/2 red onion, diced
-
1 can black beans, drain and rinse
-
1-2 tbsp. white wine vinegar
-
salt to taste.

italian parsley or cilantro and or mint leaves, about a handful, light chop
How To Make summer salad (all summer long)

1Combine all ingredients in a bowl and toss well. Season with salt to taste. I use about 1-1/2 tsp. Kosher salt. Let it sit on the counter for about an hour if you can. Depending on how juicy your lime is will depend on 1 or 2 TBS> of the vinegar. This keeps well in the refrigerator and I have used it as a side dish or salad.
