I've always loved peas and I love this salad. There are so many ways you can change it to your liking. Sometimes I add chopped boiled egg and tuna too. I made it simple today with what I had available. This makes a great side for Easter.

Ingredients For ~ spring time pea salad ~ cassies

  • 3 c
    frozen peas, thawed and drained - i use smaller peas
  • 1 1/2 c
    fresh shredded, colby cheese - or is great with swiss too
  • 1/4 - 1/2 c
    red or sweet onion, diced - i use red for color
  • 1/2 c
    diced celery
  • 2 - 3 slice
    crisp bacon, chopped
  • 1
    hard boiled egg, peeled and chopped if desired
  • 3/4 c
    mayonnaise
  • 3 tsp
    each - sugar & milk
  • 1 1/2 - 2 tsp
    salad supreme seasoning
  • pepper
    to taste

How To Make ~ spring time pea salad ~ cassies

    In a medium bowl, toss together the peas, onion, celery, cheese and bacon.

    Mix together the mayonnaise, salad seasoning, pepper, sugar and milk. If too thick, add a little more milk. Taste and add more seasonings if need be.

    Toss the dressing with pea mixture, until all is coated. Cover and chill until ready to serve. Note* I've also added a little tuna to this many times.
