Ingredients For rice salad tropicale

  • 1 cup uncooked rice
  • 2 cups orange juice
  • 1/4 tsp. salt
  • 1 tsp. grated lemon peel
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cups pineapple chunks
  • 1/2 cup raisins
  • 1 cup miniatures marshmallows
  • 2 tbsp. sugar
  • 1/4 cup pineapple juice
  • 1/3 cup thinly sliced green pepper
  • 1/3 cup toasted slivered almonds, optional

How To Make rice salad tropicale

  • 1
    Mix rice, orange juice and salt in pan. Bring to boil. Stir lightly with fork. Reduce heat. Simmer covered about 20 minutes or til rice is tender and liquid has been absorbed. Cool thoroughly.

    rice in bowl. Add lemon peel, mayonnaise, sour cream, pineapple, raisins, marshmallows, sugar, pineapple juice, green pepper and almonds. Mix lightly but well. Chill til ready to serve. Serves 6 to 8
