This salad is also referred to as "Peasant Salad". My Lebanese mother served a bowl of this salad at dinner time even if the main course was not a Lebanese dish. I still love the fresh taste of the vegetables and the combination of the mint, garlic and lemon juice soaked bread. YUMMY!

Ingredients For fattoush

  • 1 c
    crisp toasted bread (preferably pita) cubed
  • 2 sm
    cucumbers (peeled and diced)
  • 2 c
    shredded lettuce
  • 2 md
    diced tomatoes
  • 1/2 - 1
    finely chopped green peppers
  • 1/2 c
    chopped green onion
  • 1/2 c
    finely chopped parsley
  • 1/4 c
    finely chopped mint (fresh)
  • 1/2 c
    salad dressing
  • SALAD DRESSING
  • 1/2 c
    lemon juice
  • 1/2 c
    olive oil
  • 2 clove
    garlic crushed to a paste
  • 1 tsp
    salt
  • 1/4 tsp
    pepper

How To Make fattoush

  • 1
    Place all ingredients in a bowl and toss well.

    For dressing, mix the lemon juice and oil together. Crush the garlic to a paste with the salt and mix it into the oil mixture. Add the pepper. Pour 1/2 cup in the salad mixture and toss well.
