This uses a great homemade sauce!!! Quick and easy!! I know that there are a few different names and recipes for this but, this is a family favorite. It's sooo versatile too!!

Ingredients For cowboy caviar

  • 1 can
    pinto beans
  • 2 can
    white shoepeg corn
  • 1 can
    black-eyed peas
  • 1
    red bell pepper
  • 1/2-1
    red onion
  • 2-3
    celery stalks
  • 1 c
    sugar
  • 1 c
    apple cider vinegar
  • 1/2 c
    oil any kind
  • 1 pkg
    scoops or fritos chips

How To Make cowboy caviar

    Drain and rinse the 4 cans and combine in a large bowl.

    Chop the next 3 ingredients and add to bowl. You can add more or less according to taste. You can also add any vegetable you prefer for this recipe. I would recommend making it this way first and then try adding different things.

    Heat the sugar & vinegar on the stove on med-low heat until sugar is dissolved and then add oil and heat through. Stir well. Combine with other ingredients and stir. Chill in fridge thoroughly about an hour. You may want to drain some of the juice just before serving. I make extra because I love it! Serve with Scoops white corn chips or Fritos Scoops You can also make this same liquid sauce for any pasta salad recipe!! It's kind of a basic vinegar sauce. Sometimes I add pasta to this too and make it as a salad instead of a dip.
