We found this southern recipe hidden among the piles of papers we were going through. It was written on the back of an envelope. However, we don't know from where it came. All I can tell you is that my family and friends love it. Perfect for these hot summers or anytime. No cook recipe:} The homemade ranch dressing brings it up several notches. Fun to make and delicious to eat!

Ingredients For cornbread salad-connie's

  • 2 c
    corn bread, busted up into medium pieces
  • 1 c
    green peppers (adjust peppers to your liking)
  • 1 c
    red peppers
  • 1 c
    yellow peppers
  • 2 can
    pinto bean, drained well
  • 2 can
    corn, drained well
  • 2 c
    tomatoes, diced
  • 1 c
    scallions
  • 2 1/2 c
    cheddar cheese
  • ranch dressing:
  • 8 oz
    sour cream
  • 1/2 c
    mayonnaise
  • 1/2 c
    dried ranch dressing
  • 1/4 c
    milk
  • 5 slice
    bacon, cooked and crumbled

How To Make cornbread salad-connie's

    Lightly combine all ingredients well, down to ranch dressing, in a large bowl. (I find my hands are the best tool for this.)

    Mix ranch dressing ingredients in small bowl. Do not add dressing to the mixture until serving.
