Ingredients For creamy tossed spinach salad

8 slicebacon
-
1/2 cmayonnaise
-
2 Tbspmilk, half & half, or light cream

1 Tbsphoney
-
1 Tbsplemon juice
-
salt & pepper

6 cfresh spinach, rinsed, stems removed & torn

1 csliced fresh mushrooms
-
1medium tomato chopped
-
2hard cooked eggs chopped

thinly sliced red onion
How To Make creamy tossed spinach salad

1Cook bacon to crisp. Drain & crumble 4 of the slices. Reserve remaining 4 slices and 1 tsp to 1 tbl of drippings. Discard remaining drippings.

2In a bowl, combine mayo, milk, honey, lemon, salt & pepper, crumbled bacon and as much of the bacon drippings as you like. Stir well to combine.

3In a salad bowl, lightly toss the spinach, mushrooms, tomato and eggs. Pour dressing over, toss and coat well. Garnish with the other 4 pcs. of bacon broken into larger pcs.
