Ingredients For creamy tossed spinach salad

  • 8 slice
    bacon
  • 1/2 c
    mayonnaise
  • 2 Tbsp
    milk, half & half, or light cream
  • 1 Tbsp
    honey
  • 1 Tbsp
    lemon juice
  • salt & pepper
  • 6 c
    fresh spinach, rinsed, stems removed & torn
  • 1 c
    sliced fresh mushrooms
  • 1
    medium tomato chopped
  • 2
    hard cooked eggs chopped
  • thinly sliced red onion

How To Make creamy tossed spinach salad

  • 1
    Cook bacon to crisp. Drain & crumble 4 of the slices. Reserve remaining 4 slices and 1 tsp to 1 tbl of drippings. Discard remaining drippings.

    In a bowl, combine mayo, milk, honey, lemon, salt & pepper, crumbled bacon and as much of the bacon drippings as you like. Stir well to combine.

    In a salad bowl, lightly toss the spinach, mushrooms, tomato and eggs. Pour dressing over, toss and coat well. Garnish with the other 4 pcs. of bacon broken into larger pcs.
