This is in honor of my neice. When the kids were growing up we always had birthday parties for the kids and I had made this salad for one of the parties for my daughter. My niece, Amanda, requested this salad for other parties after that. Her name is Amanda, and thus it is named.

Ingredients For amanda's salad

    head of iceberg lettuce
  • 2 c
    frozen peas
  • 6
    scallions, sliced
  • 1 c
    sliced celery
  • 1 c
    shredded carrots
  • 3 lg
    hard boiled eggs, sliced
  • 1/2 lb
    bacon, cooked crisp and crumbled
  • 1 c
    grated cheddar cheese
  • 2 c
    mayonaise
  • 1 tsp
    lemon pepper seasoning

How To Make amanda's salad

    Wash, shred, and dry lettuce. Pour boiling water over peas to thaw and drain.

    Place lettuce in a deep 9x13 pan or dish. Top with peas, scallions, celery, carrots, and sliced eggs. Sprinkle all but about 1/2 cup of cooked bacon on top.

    Mix mayonaise and lemon pepper. Spread over salad mixture in the the pan. Sprinkle bacon and cheese over the top. Refrigerate until serving time.
