Ingredients For strawberry panzanella salad

  • 4 c
    day old bread cubed (preferably Italian or a rustic sturdy loaf)
  • 4-6 Tbsp
    melted butter
  • 1 c
    packed brown sugar, divided
  • 1 lb
    fresh strawberries
  • 1 c
    Greek yogurt
  • 4 sprig
    mint
  • 1 tsp
    vanilla extract

How To Make strawberry panzanella salad

  • Toast bread coated in butter and brown sugar.

    Toss cubed bread in melted butter and 1/2 cup brown sugar. Bake at 350 degrees F for about 10 minutes or until the bread is crisp. Remove from oven. Cool the bread. Bread will continue to crisp as it cools.
  • Mix sliced strawberries and brown sugar.

    Take about 1/2 cup of the sliced strawberries and add them to a bowl with 1/2 cup of brown sugar. Macerate (grind) the two together until the strawberries create a syrup. It's ok if there are still hunks of strawberry in the sauce. You can adjust the amount of sugar to fit your family preference and raw sugar works well too.
  • Toss the cooled bread and strawberry sauce.

    Toss the remaining sliced strawberries and cooled bread chunks in the strawberry sauce. Place in a bowl or martini glass.
  • Blend Greek yogurt and vanilla extract.

    Blend the yogurt and the vanilla extract.
  • Top strawberry mixture with Greek yogurt mixture.

    Top your servings of strawberry and bread with it. Add a mint sprig and a little more strawberry sauce.
