I like adding fruit to some salads and when I looked in my food cupboard I found a few goodies and came up with this salad.

Ingredients For spinach mandarin orange salad

  • 1 pkg
    10 to 12 ounces baby spinach
  • 1 can
    mandarin oranges drained
  • 1 c
    sliced little white mushrooms
  • 12
    grape tomatoes cut in half
  • 2 c
    peeled chopped apples
  • 4
    strips side bacon diced and fried crisp
  • dressing
  • 3 Tbsp
    ketchup
  • 2 Tbsp
    apple cider vinegar
  • 1 1/2 tsp
    white worcestershire sauce
  • 1/4 c
    sugar
  • 2t Tbsp
    chopped green onion
  • s and p to taste
  • 1/2 c
    vegetable oil

How To Make spinach mandarin orange salad

    Wash and dry spinach wash and slice mushrooms peel and cut apples in half then half again medium to small chunks put apples in small bowl and pour lemon juice into bowl and stir to completely cover apples let them sit for 10 minutes to avoid them from turning brown.

    Fry diced bacon in small fry pan and cook til crispy remove from pan and place on paper towel to absorb the fat when cool add to salad bowl along with the rest of the salad ingredients..the bacon can be omitted for any vegan dining with you

    Dressing.......Put all salad ingredients into blender process until smooth while processing gradually add oil in a steady stream..yield 4 to 6 servings..about 3/4 of a cup..pour over salad just when ready to serve,..
