Ingredients For green apple fennel and walnut salad with honey mustard dressing

  • 1/4 c
    fresh lime juice
  • 1/4 c
    stone ground mustard
  • 5 tsp
    honey
  • 2/3 c
    olive oil, extra virgin
  • 1/4 tsp
    black pepper
  • 5
    celery stalks with leaves, sliced thinly on diagonal
  • 2 lg
    granny smith apples, halved, cored and thinly sliced
  • 1 md
    fennel, trimmed, thinly sliced, reserving 3 tablespoons of fennel fronds
  • 1/2 c
    toasted walnuts

    In a small mixing bowl whisk together lime juice, ground mustard, honey, olive oil and pepper to blend.

    In a large bowl add celery, apples and fennel. Coarsely chop walnuts and add to salad. Add dressing in small amounts, just to coat. Toss to blend. Chop fennel fronds and sprinkle on top before serving.
